Founded by renowned Chefs, Scott Tycer and Jason Gould, Gravitas offers a new and exciting culinary experience consisting of American Bistro Style cuisine. Gravitas' decor is a combination of both modern and classic elements as a result of the restoration of one of Houstons' finest historic locations. The art in Gravitas is especially chosen and represented by Hiram Butler of Hiram Butler Gallery. Local artists, James Surls and Richard Tuttle have also contributed to Gravitas' unique atmosphere.

Chef Scott Tycer - Widely acclaimed Chef Tycer, a native Houstonian, holds a Bachelor of Arts in English Literature from University of Texas at Austin and graduated at the top of his class from the Western Culinary Institute in Portland, Oregon. Notably, he served as Executive Sous Chef at Wolfgang Puck's Spago in Palo Alto, California. Chef Tycer is known throughout the Houston restaurant circuit, having been associated with Benjy's, the Ritz Carlton and Aries Restaurant.

Chef Jason Gould - A native Australian, Jason received his formal training at Dandenong College and went on to become a Sous Chef at Mirabelle, a Michelin one-star restaurant in London, where he worked under famed chef Marco Pierre White.

Since its opening in June of 2003, Jasper's Plano has been named one of the Best New Restaurants in America by Esquire Magazine, Best Restaurant Design by Dallas Area Restaurateurs in D Magazine Jasper's, a comfortably upscale restaurant, features a menu focused on the best of America's regional cuisine, including rotisserie chicken, fish, steaks, salads, and pizza. "Jasper's serves the type of food you'd get at my house if I were cooking," says Executive Chef Kent Rathbun. "We want this to be a place where diners can visit whether they're looking for an inexpensive light meal or a higher-end dining experience-we've got it all." With the success of this location, Chef Rathbun has decided to expand his concept to The Woodlands, Texas.

Over the past four years, Kent traveled to New York, San Francisco, Los Angeles and Chicago with the Engstom design team to research design ideas from some of the hottest restaurants around. We know you will agree that the results are amazing!
